Serving Suggestions

This recipe has quickly become a staple in our house. To add a little freshness, I like to serve with some fresh greens (spinach, kale, etc.) mixed in.

If you need an oven-free meal, the peppers, onions, and chickpeas can be cooked on a griddle with the lid on, stirring occasionally. The texture isn’t quite as good, but it let me keep eating this fantastic meal even in the Texas summer heat. 😀

Need an even more budget-friendly option? Feel free to swap the quinoa for some brown rice.
